PROTECTED GEOGRAPHICAL INDICATION KITHAIRONA’S SLOPES
Central Greece, vineyards of Kithairona’s Mountain, 60km West of Attica in altitude 450m.
Attica’s region climate is famous over the world: hot and dry summers give way to surprisingly cold winters with very little rain overall. Mild and cool winters and cool summers. Grapes ripen well without difficulties.
Clay soil chalky substratum covered by a layer of stony clay allowing for drainage and soil heating.
METHOD OF PRODUCTION
Red vinification at medium temperature, preparation in tanks, then they transfer to new French oak barrels for maturing 16 months at least, bottling and remain in bottles for one year in underground wine cellar of winery.
Deep dark red color, shiny, medium-intense aromas bouquet of dry fruits, satisfactory oily, smooth and balanced acidity, rich body, long lasting aftertaste with notes of dried nuts and berries.
OAKING PERIOD IN BARREL
Around 16 months.
Red meats, hunt with vegetables, yellow cheese medium oaked, lamp.
In room temperature (16-18 °C).
