PROTECTED GEOGRAPHICAL INDICATION KITHAIRONA’S SLOPES
Central Greece, vineyards of Kithairona’s Mountain, 60km West of Attica in altitude 450m.
Attica’s region climate is famous over the world: hot and dry summers give way to surprisingly cold winters with very little rain overall. Mild and cool winters and cool summers. Grapes ripen well without difficulties.
Clay soil chalky substratum covered by a layer of stony clay allowing for drainage and soil heating.
METHOD OF PRODUCTION
Red method of vinification is used, grapes are harvested in their exact date of mature, transferred to winery in cages, remain with skin till wine obtains its deep dark red color, then get cleaned and get into French barrels for oaking period.
Deep dark red color, shiny but of low clarity, aromas of dried plum and berry, oily with balanced acidity, rich bodied with long lasting aftertaste.
OAKING PERIOD IN BARREL
Around 18 months.
Grilled red meats, cheese with herbs, plates with mushrooms, bacon or prosciutto, lamp, hunt with onions.
In room temperature (16-18 °C).
